"I'm Tish Cooper and I'm Amanda Persico for ExpertVillage.com at Joseph Filippi Winery, and we're going to talk today about some wine selections. Now we're going to be talking a little bit about wine tasting, there are some pretty simple rules, they're not rules per se, but just guidelines to follow. Normally we would sniff, get your nose clear down in there, don't be shy at all, and move the glass around, the aromas will sit at different layers so you want to get the full spectrum. Blow out through your nose, and then resmell. We do sniff, swirl, sniff, sip, and spit. There's five S's. You sniff first because you don't want to blow off the most volatile aromas and miss some, swirl then to oxygenate things, open up the wine, sniff it again, and then sip it, and it is not necessary to spit your wine when you come to a wine tasting. There's a lot of rumors, people ask me that all the time, do I have to spit the wine out. No, No, drink it, that's fine."
