"I'm Tish Cooper and I'm Amanda Persico for ExpertVillage.com at Joseph Filippi Winery and we're going to talk today about wine selections. The fermentation process, the harvest season is such a joy. We watch the grapes in mid July, they'll start changing colors, they start to ripen, we're out in the vineyards all the time tasting the grapes, trying to watch because there's just about a three day window where the flavors finally develop, the sugars are just right, acid's not too much, but it has to be just right, and it's easy to miss but we're out there all the time so that that doesn't happen. We watch them, when it's time we call up the picking crews, they go out and pick the grapes for us. We're out there working with them but, we bring the grapes into the winery, we take them off the stems, the crushing, destemming system, the grape goes into the tray at the bottom and then up to the tank. We add yeast, we add vitamins for the yeast, we add oak, at that point, and keep the temperatures somewhere around seventy degrees to ferment it slowly, let those flavors really develop."
