"One of the things that we do when we taste wine; of course, is we smell it. I always love to hang around people, and have them smell the wine and tell me what they're smelling, because they'll always say; ooh, woodsy aroma, alcohol aroma, fruity; okay, true. What I like people to know when they're experts, is the difference between aroma and bouquet. In ordinary conversation, people will use these terms interchangeably, but actually they're not. An aroma of a wine is something that comes from the grape, so if you're talking abut scents that are fruity, floral or spicy, or straight from the grape into the glass, you're probably using the right term if you use the term aroma; however, the term bouquet should be applied to scents that are from the byproducts of fermentation or wine making. If it's oak it's a bouquet, if it's yeasty it's a bouquet. If it's fruity it's an aroma, if it's floral it's an aroma, but if it's a yeasty, oaky, buttery scent it's the bouquet, so don't use those words incorrectly, because if you do someone might laugh at you behind your back. Aroma; the scent of a wine from the grape, and bouquet; the scent of a wine from wine making; a very important distinction."
