Difficulty: Moderately Easy
Tips & Warnings:
- Bake your pies on a cookie sheet covered with aluminum foil for easy cleanup!
- Use more strawberries if you like it less tart
- The pie may run over, be careful this liquid is very hot!
Step1

Preheat oven to 450 degrees F.
Step2
Line 9-inch pie plate with pastry.
Step3
Wash strawberries and rhubarb. Slice strawberries in chunks. Peel the outer layer off the rhubarb and then chop rhubarb into 1/2 inch cubes.
Step4
Add the lemon juice and the sugar and let sit for 5-15 minutes.

Pour into prepared pie plate.
Step6
Cover with crust. I cut the crust so it was just a little smaller to leave it open so it would vent. You can brush it with a little milk and sprinkle sugar on top if you wish.
Step7
Bake at 450 F for 15 minutes, then for 1/2 hour at 350 F.
Step8
Serve with ice cream or whipped cream and Enjoy!

on 6/4/2008 Its been a long time since a rhubarb pie. Tasty. I'll use real sugar though. somehow the thought of using a artificial sweetner in something as old fashion as this is just seems wrong to me. Nice video and a tasty recipe. Kudos
