Series Summary

The wedding cake is a traditional cake that is served at a reception after the wedding ceremony. It varies in size dependent on the size of the guest list. It usually consists of multi-layered cake that is covered in marzipan or fondant icing as well as decorative accents. Common themes of wedding cakes include rings, bows, flowers, lace, doves and horseshoes. A baker has to form a cake that can withstand the weight of multiple layers, filling and icing. The tradition of the wedding cake dates back to medieval times when each guest would bring a small cake and add it to a stack of cakes. If the bride and groom could kiss over the stack of cakes, it was considered good luck.

In this series of expert videos, you will see examples of different wedding cake icing techniques. Watch as our expert demonstrates the turntable technique to icing the wedding cake. Begin with icing the middle layer of the cake and then add layers to the cake in a specific order. Icing the sides of the cake and smoothing the icing can be tricky. After watching these videos, you will have the confidence for applying icing to a wedding cake. Get tips on adding trim icing and other details from our expert here!

"Hi, I am Heidi DeHoyos and I am here on Expert Village to show you how to ice a wedding cake. First, we have our cakes. I have already had them pre-made here for you and I am going to use this turntable and you are going to need this turntable to get the sides the way you want them to smooth out the front of the top of the cake. Here I have the chocolate icing which I already had it pre-made. I like to have it maybe 5 to 10 minutes whipped before I use it to have it nice and you know, nice and soft."
