A little cheese. A scrap of ham. A couple eggs and, presto, with a quick twist of the wrist you can create a hearty omelet for a light supper or Sunday brunch.
Crack 2 eggs into a small bowl and add 1 teaspoon cool water.

Whip the eggs with a fork.
Step3
Pour the eggs onto a hot, greased griddle rotating the griddle to spread the eggs.
Step4
As the eggs heat and start to set up, gently scrape the edge of the omelet inward a half inch or so. By making a thicker edge, the omelet will be less likely to tear when flipped.
Step5
On the left hemisphere of the omelet, sprinkle shredded cheese along with any other filling ingredients you have on hand such as spinach, ham, onions, green peppers, mushrooms or even leftover taco meat or chili. Season with salt and pepper.
Step6
As shown in the video, wiggle a spatula under the right side of the omelet and gently fold the right side over the left side of the omelet. Cook for 15 seconds or so to melt the cheese, although you may have to let it cook longer if you really loaded it down with ingredients. Serve with sour cream or salsa if desired.

Good article, but the video was rough.
work on the flip more, and itstead of using a griddle (which alot of people dont have)
use a frying pan with a lid,
then the omlette will be fluffier and have a better texture.
