"Hi! I'm Louis Ortiz on behalf of Expert Village and we are back to show you the procedure for a roasted bell pepper; we've got a red one here. Again, I put it on top of the rack here on an open flame on high and I just turn it periodically so that we got a char on all sides. We are going to go ahead and bring him over here to the ice water bath because I just turned the fire down on him. We are going to just submerge him in this ice water and turn him around so that we can cool him off. This is kind of like the blanching and shocking method that we showed you with other vegetables in a sense. We take it from a really high extreme heat to a low extreme actually and kind of stop the cooking process and such. There will be quite a bit of steam that generated on the inside of this bell pepper so the inside of this guy, the meat is going to be really nice, soft and tender. But because we charred the outside it is going to alter the flavor and just bring out a more nutty earthy kind of flavor to this guy. So we are going to go ahead as I twirl him around and cool him down, I'm just kind of picking off the charred remains here. It comes off real nice and easy and again, you are not hurting anything. You want it to be blackened in that sense and a lot of folks will think well, that's just too burned. Because you are peeling it away, it is not going to alter the flavor of this guy at all. It has actually enhanced it. Again, an open flame as far as using any gas element, is always advised to not try this with an electric element. This pepper would catch fire and do all kinds of crazy things on an electric element, so this is only advisable for open flame. They make numerous blow torches for culinary purposes, for creme brulee and such and a blow torch like will work just as easy if you do not have a gas range. So the majority of this is all peeled and cleaned off. I'm going to go ahead and rinse it in the sink and we will cut into him and show you how to clean it from there."
