Hi! I'm Louis Ortiz on behalf of Expert Village and today we are showing you how to cut and prepare leeks. We showed you in a previous video how to break down a leek from its whole form into the one we have here. I've cut the stalks in half and this allowed me to be able to pull apart gently so that they wouldn't fall apart that actually rinse these from the inside because they have a little bit of dirt on the base and tops as well. So usually when you are using leeks and stalks and things, you can just cut these in half and throw them in there as whole pieces because it is a longer cooking process and you want bigger pieces so that they will survive the longer cooking process. Otherwise, I tend to cut into just uniform half circles to make those look nice and as I cut, they separate into these smaller pieces. These can be sprinkled on at the last minute in dishes. They can also be sprinkled on as a garnish for soups. So we want to make them a little more dainty, we can make another cut this way, then we can make small quarter circles, like so or if you so desire, we can make a julienne cut and we can leave these leafs this way and you can cut these whatever size you wish just depending on the recipe. Those can turn out into nice little straws and these can be lightly dusted in flour and flash fry in just a tiny bit of olive oil and use as a garnish also. Those are the different cuts that you can use for a leek and again those can be used in a multitude of stocks and sauces and as garnishes as well.
