"We're going to make dessert now it's a fresh peach crustada. A crustada is very much how can I say it a very rustic tart and this is something typical that many mothers, grandmothers, even some men I would think make in Italy and I have them. It's really pretty simple right here I have 1 1/4 cups of all purpose flour, 1/3 cup of sugar, 1/4 teaspoon of actually this isn't a quarter of a teaspoon look like a teaspoon but I'm only going to use a quarter teaspoon of the salt, 1 egg yolk, and 8 tablespoon of unsalted butter thats been cut up in chunks and it's still cold. And the next step will be to put them in the cuisinart, we're using the regular blade in the Cuisinart the one that we used before for pulsing. And guess what we're going to pulse again so here goes the flour, and the sugar and a quarter teaspoon of salt and we're going to put the top on, pulse, pulse, pulse, pulse and what this does is combine the flour, the sugar, and the salt and evenly throughout so we don' t have sections that aren't mixed well. Next I'm going to put in all the butter and if it's really cold I can work with it right away if you wait and let it get to room temperature when the dough is ready you need to chill it. I like to do things fast."
