"Okay our next step with the beef steak is to put our ridge pan on the highest flame that you can possible can get on your stove. If you have an outdoor grill you can use that as well. My stove has one burner that's 15000 btu's that's about what Asian people use for woking things wok not walk like the dog but wok stir frying at a very high heat. Anyway the pan is getting really hot and once it's really really hot I just by the way stirred my palanta which is in here working and now I just have to set this for about 10 more minutes. It's going to be done about the same time as the beef steak which is really great. Now I'm just putting some extra virgin olive oil into the pan and pardon me a second while I get my basting brush. These basting brushes are great to this can't stand up to about 500 degrees and there available in any kitchen store too and I thing Tarcha has them now too not that I'm advertising for them. But in the kitchen store I think the one I bought was $10, Tarcha was $4 so if you don't mind going to Tarsha please go ahead and buy one of these there fabulous for basting. And now I just put the beef right on there and what I like about Italian cooking is that they really use materials that are relativity available they grow some of the best cows, the best meat, obviously I'm not a vegetarian. But when we we're Florence eating beef steak Florentine my god it was fabulous."
