"Called rocket cause it grows so fast you can buy at a farmer's market, in super markets and sometimes pre washed which is the way to go in my book. Anyway what we're going to do is toss the arugula with a tablespoon of olive oil and I always use my hands and I wash my hands all the time. Sometimes I'll even wear rubber prep gloves but I really like working with my hands much more and now I'm going to plate the arugula's. I just make a nice round mound in the middle of the plate let me go ahead and do these 4 cause I have a hungry crew ready to eat. There we go we'll I think if your have a dinner party and you like smaller salads you can actually stretch this out to 6 portions I eat a lot of salad and I really like a full plate. There you go that's that then I'm going to top it with our mixture that has been sitting for a minute while we got the arugula ready, these are the asparagus tips and fava beans and also the raw asparagus and that's pretty much the way it's going to look but we're not done yet. Going to do these couple of plates I think you can go for 6 okay that's steps done. Buy some really good quality balsamic vineager it doesn't have to be this brand but it should come from Italy it should be aged because what a lot of it is called balsamic vineager is really just colored wine really so what your going to do is your drizzle this don't be shy, on top of each salad. And then we're going to top it with a slice of not a slice but we're going to shave some Parmesan cheese on top, so let me start shaving and you'll see what that looks like. And this is basically what your finish salad will look like ain't that gorgeous some people like a lot, some people like a little, I think that's plenty and I just go ahead and do that on the others. This is it this is the arugula, fava bean and asparagus salad with shaved Parmesan cheese if you can't get Parmesan, pecorino is good to. And I'm really just using a vegetable peeler I like one with a good wide handle it's easier for me to use and I'm just shaving off pieces of Parmesan cheese."
