"If you taste the wine, you always have to sip some air into your mouth as well. First it doesn't look too good, but if your companion tastes wine as well and if you do the same as well, it won't bother anybody. Of course usually you don't do this, if you're sitting in a restaurant. If you're a professional who want to taste some wine, you have to do like this: you always have to fulfill your mouth, because this way, you can feel all the crispiness, the acids on the palate, on your tongue, and if you sip some air as well, those are what are called the retrograde smell, that comes back, from backward to your nose and these are really important if you really want to taste the wine. The wine will give you the impression, rather, this is a long wine, if the aroma stays in your mouth for a long period of time, for instance tow, three minutes, or it disappears, very short period of time. Good wine stays in your mouth two, three minutes, sometimes longer."
