"Hello everyone. My name is Matt Fuller. This is Denise Bennet, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. We're going to go ahead and do this sauce because I really want to dress this plate. The mixture that we just did, this pie, this is mostly Asian pear and Fuji apple. As you can see, it's kind of thick, it's a nice consistency. I'm going to add just a little bit of banana to it so it will be a little bit thicker. Consistency is really important in this part of it, for the sauce. And I want to add some goji berries for color. When you choose your fruits, you of course want taste, but look at the goji berry color. It's an amazing orange. Depending on what you're doing with it, it might come out real vibrant. This is going to be exactly what we want. Okay, now, this is the consistency part. This is heavy, too heavy for a sauce, but it's the right color and we're going to add a little bit now of the apple and pear mixture and now it's coming into more of a consistency that I want. You're actually the expert on this, a little bit more? No. That right? Yeah, that's it. Okay. Doing sauces where you're going to try to make designs on a plate, it is really important that you have just the right consistency so that when you make your design that you don't have run, that the juice of whatever you make the sauce out of doesn't run all over the plate and destroy the design that you're trying to create. Denise is actually pouring this into a little squeeze bottle here. These are really inexpensive. You can get it at any kitchen supply store. When you find something totally creamy and totally perfect, there's probably chemicals and all kinds of stuff in it. Sometimes I've gone to dress a plate and all of a sudden a large amount comes and I don't see anything wrong with that. You should do this, please. Okay. We didn't have very much. As you can see, it's not quite the consistency that I might have liked and that's okay. It still looks extremely beautiful to me and the sauce is a wonderful addition to the pie. As I was saying, you know it's just trial and error. This is just a life long journey for us that is never ending and we're happy about that. Thank you so much for enjoying this and enjoy."
