"Hello everyone. My name is Matt Fuller. This is Denise Bennet, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. We're going to go ahead and finish up this pie. This section right here, this section removed the flesh of the pie so we've got some chopped pear. Let's put it in that so we can see it a little bit better. Oh okay, all right, got it. So they can see what you're doing. I agree. So, we have banana, plum, and Asian pear and I'm going to use some figs as well. Figs are wonderful for dressing the plate as well. I tell you what, this is a new thing for me, this is a fresh fig and for most of my life, the only way that I recognized a fig was in fig Newton and I tell you what this is something awfully wonderful if you haven't been exposed to these so I really encourage you to try and find these at your local market. Yep, yep, and other than the fig, we're actually using fruits that you can probably find all year. Apple, banana pear. This is really important, I got to kind of show you this. This section right behind this cap is definitely something to use. There are usually, if I mix up something to dress the plate like a cream of some sort, which when I say cream I mean a nut cream, I might mix say a raspberry with a little bit of banana or maybe an almond with goji berry and that's what I would use to dress this plate. As I said before, we really like our food to look beautiful. So, not just taste beautiful. This is, kind of hard to see it, but there's a little bit of like this fruit cream stuff right in there. It depends on what I use, sometimes there's a lot of it and then this right here some of the juice, almost looks like an apple sauce. I make sure to use this. Have you ever had fresh apple sauce? I have not. Oh, I'm going to have to make you that. This is kind of it right there. I don't know if you can see that or not, but inside this is some wonderful beautiful remnants that didn't get pushed out through the screen over her and we love to take a little spoon or spatula and grab this out. It's a wonderful addition to the pie. I'm going to let you have that. Where would you like it? Just have some. Okay. You don't want any extra for the pie. Well, that's ok, we've got enough. That's like Asian pear in there as well. Just to let you know, my feeling on this is, keep your hands really really clean and you can use your hands. That's how I feel. I don't touch meat and cheese and things that have that bacteria so, I keep my hands really clean and I use them. If you want to use gloves, that's fine, just make sure that there isn't like a powder or treatment that could go into your food. Make sure that the gloves are not going to be part of your food."
