"Hello everyone. My name is Matt Fuller. This is Denise Bennet, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. Ok, so it's kind of like a dough at this point and we've used just the right amount of dates because it is very easy to use. You know this is where your creativity comes in. Just have some fun with it. I actually, Matt taught me this, cause I was just making my pies, just putting the crust on the bottom, pie filling on the top and you helped me with creativity and I appreciate that. Your welcome. Absolutely. So, now I go ahead and try to make a heart which means a lot to me at this juncture because I am following my heart in a lot of things and we live too much in our minds so we need to reconnect with the heart. I like to make my pies with a heart. One thing to keep in mind when you're using raw foods, and especially when you get away from wheat, is that they're more dense. The lighter that you can go with the crust, the more you can stay close to the fruit without adding a lot of things and making it really too combined, too processed. Even though this is raw food, you can get to a place where you're adding too many things and I've gone to some very fine raw food restaurants and they're just making too many dehydrated things, too many things that don't combine well with the body. So, keep that in mind, just because you do raw food doesn't necessarily mean that your body is going to be happy, especially when you go through the first few weeks and months of it. So, kind of hang in there and also as I said, I try to stay as close as I can to the actual food. Rather than processing, into a really highly creamy mixture, I try to keep it closer to the actual food so I might chop things more than run them through an expensive machine because then my body can recognize it better. It's looking so beautiful. Well, I'm just having some fun. We don't need to be perfect and we certainly don't need to be symmetrical which is obviously I've been able to accomplish. What do you think? Can I quit there? Is that good enough? Yea, it's beautiful. And there's the crust."
