"Hello everyone, my name is Matt Fuller and this is Denise Bennett, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. So we're going to go ahead and do our mango next. We're going to add this. So, I'm going to go ahead and start cutting this. Mangoes are a little difficult to, you know, get used to working with. There's an unusual, I'm not sure whether it's called a pit or a core or a seed. For me it's been a little bit of a challenge learning how to get around that. I don't know if the camera can pick that up or not, but right here you can see this line going down the mango right there. Can you see that? That right there is part of that seed or that core or that pit that you don't want to get involved in this process. So, you know, just try to cut lightly on the outside and if you don't see it then you can cut a little bit more up, you can always add more. As you can see on that one, I cut a little too deep. So what I'll do is I'll just simply clean that up here in just a moment. Or I'll set it to the side and just simply use these pieces here. Would you please grab me a spoon? "Yes." One other thing that sometimes people like to do is, actually to peel these with a knife before you cut them. As you can see them, if you've ever scooped an avocado out of it's skin, that's kind of what I'm doing here. It's a little bit more difficult that an avocado, but it does work. As you can see I scooped it out, there is some left. Here is the actual part of the mango that we're going to be eating, very nice and succulent, fresh looking. I'm going to try and scoop this one out. Okay, and now I'm going ahead and start cutting these into strips, just as I did the others. Then I'm once again going to set these on to the plate strategically just for appearance, whatever makes you happy on the day that you're preparing it. This is a particular plate called Stonehenge. You'll see why we call it Stonehenge when we're done. I'm going to keep that a secret until we are done. But as you can see it's just a wonderful array of colors that we had going already. It just, it gets me excited, you know! "It's really beautiful." If that's unusual or strange, so be it. It makes me happy. So we're going to just go with that. That's how I'd like it to look for right now."
