"Hello everyone my name is Matt Fuller and this is Denise Bennett, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. Go ahead and get started. We do have our ingredients that are out here, you can see. We do have a fresh pineapple. We have some fresh red grapes right here. We have a fresh mango. We have a dragon fruit and we'll get into that in a little while. We have a red pear and we have a banana. So we're going to go ahead and get started. We're going to start with our banana. Go ahead and peel this. I do like it to be somewhat of a, let me say an Asian or a Thai style which would be kind of the fruit prepared in somewhat of small sticks. So what I'm going to do is cut this banana into lengths that will create sticks. So, I do find that for the presentation of this particular plate that I like to use just the outer portion of the banana, not the inner portion and I will demonstrate that to you as I cut this open. As you can see, I don't know if you can see that or not, but these are very bright. This particular piece that I'm cutting around, I will go ahead and cut it wide open for you. As you can see, you can kind of see the seeds inside the banana. I prefer to use the pieces that are on the perimeter of the banana. They just have a nicer appearance. So, I'm going to go ahead and start cutting these into a little bit smaller sticks. Don't feel like this part of the banana is wasted. We can use it this in a lovely pie or something else that we might be making a little later where the presentation is not so important. This is a little better demonstration of the inside of that banana that I'm talking about, not wanting to use that center dark portion with the seeds. Okay, we have enough banana for now. I'm just going to gently place these on top of the plate, trying not to break these too much. But it happens, so; but don't beat yourself up on that. Sometimes taking a knife to get them off the board will help you maintain their shape a little bit. Just kind of gently lop them on to the plate and kind of start to begin to stack them a little bit to get a little, a little height on the fruit plate. That's for me, it's just appealing to have a nice 3D dimension."
