Now we're going to go over a very healthy variation of the shish kabob, the veggie kabob. Start off with some zucchini, egg plant, carrots, and corn. You can also substitute any vegetable you want. You want to cut the corn in about one-inch pieces going down the cob. The zucchini, you want to cut the ends off. Cut them in about one-inch pieces as well. Carrot, go ahead and cut the ends off as well. Cut a little bit bigger than one-inch pieces. Take the eggplant, chop the top off. Go in about one inch, slice down. Actually, cut these in half. A little bit different than the other ones we've done. Now you just want to put these on the kabob however, you want to. It doesn't really matter. It's all going to get cooked the same. Actually, put the kabob through the side of the carrot, go to the zucchini, go ahead and add corn. Put this through the side as well and go to the center. It'll be a little bit easier to go through the center. And your eggplant. Once you're done with these, you can just put a little vegetable spray oil on there if you want to or some butter. It's up to you. You see we put the carrot a complete opposite way. And there you. I guess that's completely up to you. Nice little variation on the kabob, really healthy for you, the vegetable kabob.
