"Hi! I'm Josiah Owen with Expert Village. Now we're going to make our twice baked potatoes. What you're going to do is actually bake the potato the night before or early in the morning, let it cool off, and you just want to cut a little V just enough so you can get that top out there. Now, you're going to actually cut the potato off the top of the skin. Leave a little bit left, but use that potato. If you cut too much the top will just be flimsy. Now you want to take a spoon and just scoop out all the potato. Like I said, you don't want to go too far with this either because if you get a flimsy potato stuff will just cook through, or when you pick it up it'll just fall apart. Make sure you get all that. Get a spoon in there and on the edges as well, or on the ends. You want to get deep inside there. You want a nice base for the potatoes. If you don't get enough there'll just be a lot of mixture and a whole potato. You want to scoop all that. Start scraping the bottom. When you feel it poking through is when you want to stop. You want a nice bowl for our mixture."
