"Hi this is Leslie owner of Chefs Inc. Cooking school on behalf of Expert Village today we are going to be talking more artichoke and risotto. Once you get all the wine evaporated from the rice you are going to start adding the chicken broth. We are going to do this a ladle at a time with our warm broth making sure that we only add enough to just cover the rice. So you just want a thin layer of stock right above your rice. Each time you add your chicken broth you want to let it completely evaporate and then you would add more. You want to cook your rice for approximately 20 minutes stirring every 2-3 minutes. The Italian who trained me how to do risotto told me that you have to make love to your risotto. So you have to teach it very gently and make sure that you stir it so you are making your starch release each time for that beautiful risotto. So we would let this cook for a few minutes and then we would continue to add our chicken broth."
