Step1
Sanitize, and prepare your preparation area by cleaning counter area. Gather all the ingredients, and utensils you will need. This method will require two non-stick saute pans
Step2
Use 1 tablespoon of the butter, and melt it inside of the saute pan you will use for the preparation of the vegetables. Open the flame to high heat. Once the butter has melted, put the sliced mushrooms in the pan, and saute for 6 minutes.
Step3
Once mushrooms have begun to show signs of browning, add garlic, and then spinach. Saute the spinach until it begins to wilt. Then add the "steak strips", and saute until hot, and steamy which is about 7 more minutes on medium heat. Remove from heat, and set aside when finished.
Step4
Crack eggs into a mixing bowl, and scramble until it is an even yellow so that the omelette does not discolor.
Heat second non-stick saute pan and pour the egg mix into the pan over high heat after adding the second tablespoon of butter. (See Video for omelette cooking technique)
Step5
When omelette has set, add the filling that you had set aside into the middle of the omelette in a straight line so that the omelette may be folded over it into three parts. Add the cotija cheese crumbled inside, and fold omelette, and serve
Step6
Slice an avocado, and half an apricot to garnish, and sprinkle crumbled cotija over the avocado for garnish. Serve and enjoy in good health
