Method :
In a double boiler, melt the chocolate and add 1/3 cup of the 33% of whipping cream ( which is heavy cream). Add the sugar syrup and Cognac or Kahlua. Whisk together until smooth and glossy. Set aside.
Whip the remaining cream into a soft peak. Form a soft peak. You should be able to place your bowl up side down without it dropping out.
Step2
Whip your eggs whites with the cream of tartar until a soft peak forms. Gently fold into ( or whip) the chocolate mixture. Fold or whip the whipping cream into the mixture until well combined. Place into decorative champagne glasses for 6. Chill of three hours Garnish with more whipping cream. Use a piping bag. Cut your fresh strawberries into thirds and garnish on top of the whipping cream.

*Make a simple sugar syrup by adding 11/2 cups of water and 11/3 cup of sugar in a medium saucepan. Bring to a boil over medium hear and boil until the sugar is dissolved and the syrup is clear, approximately 20 - 30 seconds - give or take. Cool and Store the night before.
