Hi, I'm Chrisie Allemand, registered dietitian and founder of Nutrition Coach for Life. Today I'm going to show you how to make Crock-Pot rice side dishes. This mushroom brown rice side dish is easy to make and perfect to serve alongside grilled chicken or a fish. To make this you will need two cups of low sodium chicken broth, two cups of water, three cups of long grain rice, a quarter cup of onions and eight ounces of sliced mushrooms and a quarter teaspoon of Cajun seasoning. Start by heating your broth and water on high heat on your stove. Spray your slow cooker with a non stick cooking spray, mix the rice, onion, mushroom and Cajun seasoning and add it to your slow cooker. Once the liquid is very hot, pour it over the rice. Cook this covered on high for two hours or until the rice is tender. And that is how you make a Crock-Pot rice side dish.
