Hello, I'm Chef Phillip Dell, and we're cooking up delicious grilled artichokes with creamy butter dip today. The first thing we have to do is find the freshest artichokes you possibly can get. The next thing we're gonna do is we're gonna wash them really well. We're going to snip off the prickly ends, we don't want to get those thorns into our system, and then we're going to cut them in half. We're gonna take out that choke, that's that furry part in the middle of there, and then we're going to rub it all around with lemon juice, it will prevent oxidation so that it doesn't turn all brown and ugly looking. Next thing we're gonna do is we're gonna put it into a pot of boiling water or a steam basket works just as well. We're gonna cook that for about 25 minutes. Once it's all set, we're going to bring it back over to our grill that's already been preheated, and we're gonna get that started. We're gonna put a little bit of olive oil on the pan or on the grill, and then we're going to put the cut side down of the artichokes down onto the grill and let those get cooking. Meanwhile we're gonna take a sauce pan, we're gonna melt together the olive oil and the butter. Then we're gonna add the white wine and the lemon juice. We're gonna add some salt and some black pepper. We're gonna let that come to a simmer until it's completely melted together. We're gonna take that sauce and we're going to brush it over the artichokes as they're grilling. After about five to ten minutes we're gonna have gorgeous looking artichokes. We're gonna serve that with the creamy dip, and this is how you make them. So to make the creamy butter dip, we're going to take a pound of butter, we're gonna add it to the food processor. We're going to next add chopped dried chives, parsley, dill weed, garlic powder, onion powder, salt and black pepper. We're gonna puree that until it's all one harmonious mixture, and then we're gonna take this luscious dish, and we're gonna put it together. And this is how we're gonna do it. We're gonna take the grilled artichokes straight off the grill. We're gonna put them onto our pan nice and steamy, look at that gorgeous glistening right there from that glaze that we added, right?
