Hi, my name is Paul Delagnes, cake designer at the Bread Basket Cake Company in Camarillo, and I'm gonna show you how to make a carb-friendly cream cheese icing. First of all, you're gonna have to get your cream cheese, that is what comes tricky. Cream cheese it's really hard to find the lower in carbs. On this one I'm using tofu. It's what it's made of that's what makes it the tricky part on the cream cheese. Regular cream cheese and this cream cheese has the same amount of carbs, so the tofu part, that's what helps it a little bit. But then the sugar, this is what is definitely gonna determine the carbs. I'm using raw sugar cane. It's brown sugar. The regular sugar is a lot higher concentration of carbs. This one has only four percent, the regular sugar has 17 or 14. Even honey has a higher concentration of carbs. So what we're gonna do, we're gonna pour the cream cheese in a container, and we're gonna add the sugar, and this time if you want it to be really carb-friendly, don't put too much sugar on it, so it's nice and just barely sweet and that way you get the flavor and also get the carb-friendly cream cheese, and this is how you do a carb-friendly cream cheese icing.
