Hi, my name is Paul Delagnes, cake designer at the Bread Basket Cake Company in Camarillo, and I'm gonna show you how to do antique white icing. First of all, you're gonna need your buttercream. Make sure that your buttercream is nice and smooth, and also pay attention to the color. Make sure you have a nice white base with it, not like sometimes when you put too much cream cheese it creates that yellowish look, make sure that it's nice and white so you get that clean crisp color that you're looking for. You're also gonna need some chocolate fudge. I like to use chocolate fudge because it gets that old world look to the icing. If you use like a food coloring or anything else, it doesn't give you the same effect. So you just put a little dollop of the chocolate fudge, and then you just start mixing that. Make sure you mix it really well because that way you will create that look that you're going for. And you can also use this color when you're gonna decorate a cookie or where you're gonna do a wedding cake, that's what this is more popular to use because that has that old world look to it. So this is how you do an antique white icing.
