Hi, my name is Chef Syd Marshal, and this is "southeast roasted chicken with coconut rice." This is a dish that we're gonna make with jasmine rice, which is a fragrant rice from Thailand. We're gonna start by marinating our chicken breast in just a little teriyaki glaze. Then, we'll throw it in the oven and bake it about 30 minutes. Then, for our rice, we'll start in a rice cooker with two cups of jasmine rice. We'll add one cup of coconut milk, two cups of water, and then let it cook for about 15 to 20 minutes. Once it's done, we'll let it sit covered for another 10 minutes. Then, we'll take some grilled pineapple and toasted coconut and fold it into our rice.
