Hi. My name is chef Syd Marshal, and this is a Hunan chicken recipe. Hunan chicken is a traditional Chinese dish that's done with a darker soy sauce as opposed to Szechwan which is more of a chili garlic sauce. First we'll start by making our sauce. We're going to use 1 teaspoon of minced garlic, 2 tablespoons of low sodium soy sauce, 1 tablespoon of chopped green onion, 1 tablespoon of Hoisin sauce, 1 teaspoon of sugar, 1 teaspoon of fresh minced ginger, 1 teaspoon salt, 2 teaspoons of red chili oil, about 6 dried hot chili peppers. We'll mix this together and put it to the side. Next we're going to start with about 2 pounds of chicken breasts that we've diced up. We'll start searing this in our wok. When it's about half way done we're going to add some julienne carrot, some green pepper, some baby corn, water chestnuts, and bamboo shoots. We'll continue to stir fry this until the chicken's done, then we'll add our sauce and cook until the sauce thickens. And there you have a Hunan chicken recipe.
