This is Chef Doreen Fang, and today I’m going to be showing you how to make an easy queso blanco dipping sauce. Queso blanco dipping sauce: really, this is more of a queso fundido. It’s just a white cheese that you can dip tortillas on, and this is delicious – tortilla chips, that is, alright? But, the great spiciness from the chilies and the mushrooms, this is going to be fabulous! And, I’m actually using a dark Mexican beer, which is going to just bring a different aromatic flavor to this whole dish. Alright, so, I’m going to start with a little bit of butter and olive oil. I use the butter so it’s just nice and sweet. Then, I’m going to go ahead and sauté the poblano chilies, the jalapenos, onions, and garlic. Saute that for a little bit. Then, I’m going to add my mushrooms, and I’m going to let some of that moisture from the mushrooms that comes out, I’m going to let that evaporate. Then, I’m going to add my dark Mexican beer. I’m going to reduce that until it’s almost completely evaporated. At that point, I’m going to go ahead and add my queso blanco, and just allow that to melt with all that delicious goodness. When it is all done, it’ll be hot and bubbly. We’ll just finish it off with some green onions and cilantro, and it’ll be ready to serve.
