Hi, I'm Chef Jamie Gwen, and this is how to make Texas BBQ baked beans. I love the sweetness and the pungency and they are super simple by starting with canned ranch style beans. In a large heavy pot, cook a half a pound of bacon, cut into one inch pieces over medium heat until tender and rendered. Remove the bacon with a spoon, leaving the bacon grease in the pot and set the bacon aside. Add one sweet yellow onion, diced, to the pot along with one green apple that's been seeded and diced. Saute stirring often for about five minutes or until the onions and apples begin to brown. Add half a cup of yellow mustard, half a cup of dark brown sugar, half a teaspoon hickory smoked powder and half a pound of cooked shredded pulled pork or beef brisket meat along with one 24 ounce can of ranch style beans. Season the mixture with salt and pepper and stir to combine. Simmer the beans over medium heat for a half an hour, stirring often to avoid scorching. For the best flavor, cool the beans and refrigerate overnight before serving then heat the beans over low heat until heated through and enjoy.
