Hi, I'm Chef Jamie Gwen, and this is "how to make a Cajun shrimp dip." I love my New Orleans culinary training, and this dip is everything you love about gumbo in one casserole. Serve it with crostini, or crackers, or even veggies for dipping. Melt three tablespoons of unsalted butter in a sauce pot over medium heat. Add three green onions, chopped, one red bell pepper, seeds removed, and chopped, and one green bell pepper, seeds removed, and chopped. Sautee for about five minutes, stirring occasionally, or until the peppers are tender. Add in half a pound of cooked shrimp, chopped, half a pound of sliced andouille sausage, one garlic clove, minced, one teaspoon of creole seasoning, sauté for five minutes, stirring often. Reduce the heat to low, and add eight ounces of cream cheese, and half a cup of freshly grated Parmesan cheese. Stir the mixture until the cheese is melted and the mixture is bubbly. Transfer the Cajun shrimp dip to a casserole and top with the remaining quarter cup of Parmesan cheese. Bake at 400 degrees for about 20 minutes, or until bubbly and browned. Sprinkle with chopped parsley, and serve warm with lots of French bread slices for dipping. Enjoy!
