Hi, I'm Chef Jamie Gwen, and this is how to make shrimp with a honey jalapeno cocktail sauce. I love this southwestern version of cocktail sauce. It's a barbecue sauce base spiked with jalapenos, enhanced with the sweetness of honey, and finished with a little bit of rum. Melt one tablespoon of unsalted butter in a sauce pan and add two jalapenos that have been seeded and minced. sauté for about one to two minutes, or until the jalapenos are tender. Deglaze the pan with a quarter cup of rum, and simmer, until the liquid is reduced by half. Add one cup of homemade or store bought barbecue sauce, one teaspoon of creole seasoning, one quarter cup of honey, and a tablespoon of freshly chopped cilantro, and simmer the ingredients for about five minutes, stirring often. Transfer the sauce to a bowl, cool completely, then refrigerate over night for the best flavor. Serve my honey jalapeno cocktail sauce with cold poached shrimp, even salmon, or any seafood for fabulous flavor.
