Hello, my name is Gabe Thompson, I'm the chef of Epicurean Group: Dell'anima, L'Artusi, Anfora, L'Apicio and Epicurean Events. In this video, I'm going to make chili rellenos with chicken and cheese. I've got some chilies here, you can use pablano, these are Cubanelle. I've got Pepper Jack cheese, one of my favorite cheeses. Some onions, some ground chicken, chili powder, cumin, jalapeno, garlic, and some tomato. The first thing we're going to need to do with the peppers, is we're going to have to clean out the cores and get the seeds out. We're going to toss them in olive oil and salt and roast them in an oven until they're nice, blistery and soft. So, here are the peppers for the chili rellenos, they've been in the oven for about 15, 20 minutes. We're going to put this in a bowl, cover with plastic wrap and then, steam them a little bit. It'll be easier for us to peel them. For the chili rellenos, I'm just going to start with a pan, I'm going to add a little bit of olive oil. You want to brown off your chicken first, we're going to pull it out. And then, we're going to add all the other ingredients and saute and then, add the chicken back in again. Onions are getting little soft and they're starting to get a little color. So I'm going to add the jalapeno, the garlic and the cumin seed. I like to leave my cumin seed whole, it's going to absorb some liquid and get soft. We're going to saute this until it gets aromatic. You don't want to burn the garlic. Now we're going to add the chili powder we're going to let that coat the onions. We're going to add the chicken back in. I'm going to add the tomato. O.k., so here we have our chicken. We're going to get the Pepper Jack cheese, we're going to add it in here. So, I've waited for this to cool before I add the cheese because I want it to melt until it actually goes into the oven. We're going to get this filling and get it to inside with it. And here we have the chili rellenos with chicken and chili. A nice take on traditional rellenos with a chicken chili which is a lower calorie version of the original.
