Hello, my name is Gabe Thompson. I'm the chef of Epicurean Group, Dell' Anima, L'Artusi, Anfora, L'Apicio and Epicurean events. I'm going to show you how to make sweet chili sauce. Sweet chili sauce should be kind of a Thai food thing. It should be spicy. It should be sour and pungent. So what we're going to need to do today we have got chili flakes. We've got sugar, ginger and garlic. We've got sherry, cornstarch to thicken it up, vinegar, fish sauce. All the ingredients get added to the pan at the same time except for the cornstarch. That's going to go in towards the end but this is all going to go in together and go on the stove and we have some sherry right here with a little nuts, the fish sauce, that's a little bit of water and then a little bit of white distilled vinegar. Okay so we have all of our ingredients except for the cornstarch in the pot. We're going to bring this up to a boil and we're going to let it simmer for about six minutes. Then we're going to add a little bit of the slurry to it which is the cornstarch and water and we're going to let that cook for about two minutes and then it's ready to go. With sweet chili sauce, texture is almost as important as the flavors so you need to have some heat, you need to have some acidity and sweetness but you also want it to be kind of thick like this. So it's like a Chinese plum sauce. So that's perfect.
