Hello, my name is Gabe Thompson, I'm the chef of Epicurean Group: Dell'anima, L'Artusi, Anfora, L'Apicio and Epicurean Events. I'm going to show you how to make chili sauce for huevos rancheros, my favorite breakfast and a great thing to make for your friends if they're coming over for brunch. Three simple ingredients, serrano chilies, red onions and some tomatoes, fresh tomatoes, a little olive oil, a little salt. We're going to toss all that together and we're going to throw the tomatoes, the serranos and the onion with the serrano peppers. Three serrano peppers makes it really spicy, two will make it just spicy and one serrano pepper will be like kind of a mild, milder spicy. So, you can adjust how many serranos. So a little bit of salt, a little bit olive oil. We're going to toss this together until it's nice and coated like that. And then, I'm going to put this on a sheet pan. And I'm going to try to keep it all pretty together, I don't want to spread it out too much. O.k., so now I've got the tomatoes and peppers and the serranos and onions. We're going to slide these in a 400 degree oven for about 15, 20 minutes till the tomatoes start to breakdown and peppers and onions start to blister and turn brown. So, it's been about 15, 20 minutes. Now I'm using a commercial oven, so it might take a little longer in your home oven, not a big deal. But this is what you want the finished product to look like. So, you've got some browning on the tomatoes here, they look, they're kind of, they're mushy like that. The peppers have some nice brown on, the skin starting to bubble and the onions are starting to get soft. And a little black around the edge here is nice. Alright, so we've got our blender here, I'm going to put all of that, everything in at once. You can use a food processor or a blender, whatever you have or whatever you want. This will, a blender will yield a more pureed product. And here you have the tomato chili sauce for huevos rancheros.
