Hello, my name is Gabe Thompson, I'm the chef of Epicurean Group: Dell'anima, L'Artusi, Anfora, L'Apicio and Epicurean Events. We're going to make grilled halibut with orzo and feta. So, we're going to make a orzo salad with lemon, olive oil, lemon zest, scallions, some grape tomatoes, some hit chili pepper, some olive and a little bit of feta. First thing we need do is boil our orzo. When boiling pasta, you want to make sure you season your water generally. So, when the water comes back up to a full rolling boil, we'll add our orzo. Now we're going to season our fish before we grill it. I just season both sides. I like to use black pepper, some people like to use white pepper or no pepper at all on their fish. But I like black pepper, I like the way it tastes and I like the way it looks even. So, I'm going to find a nice hot spot on my grill. You need for fish, you need your grill pretty hot. Otherwise it will stick and become a big mess. Grill it for a couple of minutes per side, I want to get nice marks on it. And then, we're going to finish it in the oven. Alright, so here's our cooked orzo. Now we're going to make that orzo salad. We're going to through our lemon zest, the chilies, the olives, the feta, the scallions and tomato. It's going to get a little bit of lemon juice, a little bit of olive oil. So it should like nice and fresh and bright, lots of color in there, beautiful. And here's the halibut with orzo and feta, super fresh dish, super bright, healthy and delicious.
