Hi, I'm Mark Estee, and today we're going to make a white wine cream sauce. In my world, this white wine cream sauce is one of the mother sauces. We call it Bechamel. It's a classic sauce and it's a great one to master. It's a base for many different sauce preparations. So we're going to start off with some butter and we're going to get that warmed up in a pan. We'll add in some flour and we're going to basically make a pan rue. We're going to make an onion coutee next which is where we take an onion, we make a slice, we put in some bay leafs and we stud it with some cloves. This is going to give us a great flavor. We place that in the pan, we add some milk and we slowly simmer it to thicken. We whisk really well, we strain it, season it with salt and pepper, add a little nutmeg and we have a delicious white wine cream sauce.
