Hi, I'm Mark Estee, and today, we're going to make tequila baked trout. Cooking in foil or baking in foil is a great way to get flavor to concentrate inside that package. So, today we're going to use some trout. Trout's a great fish, very versatile, very plentiful. And we're going to do today, is we're going to kick it up a couple notches by adding some tequila. We'll also put in some cilantro, green onions, serrano peppers, some salt and or course, what goes well with tequila, limes. We'll wrap that up in a foil, we bake that in the oven or on a grill for about 20 minutes. When it's finished, don't open it, bring it to the table. Open it at the table and you'll get the smells and flavors going all around. And everyone will give you a couple oohs and aahs.
