Hi, I'm Mark Estee, and we're going to make tomato and basil risotto today. So first off, risotto can be scary to some people at home. Don't be scared. We're going to show you a foolproof way. First off what we need to do is make a broth. We're going to have water, tomatoes and some basil. We'll bring this to a simmer. In another pan we're going to start and heat up some butter. We add our Arborio rice, we coat that really well with the butter. We add in some onions. We continue to add stock to this as it starts to release the starches and take on the flavor of this tomato broth. We're going to add in some Grana cheese. We're going to continue to season with salt and pepper, tasting along the way, watching this nice beautiful sauce form on the inside. We garnish this with basil, Grana, tomatoes, transfer it to a platter and enjoy it with your whole family.
