Hi, I'm Mark Estee. Today, we're going to be making breaded chicken with white wine, garlic, lemon and capers. This breaded chicken is very versatile because you can make this ahead of time, or save you a little bit of time when you get it ready for your family. We're going to lay out our chicken breast; we're going to butterfly the chicken breast. We're going to run that through seasoned flour, beaten eggs and breadcrumbs. We'll heat our pan to a 350 degrees. We're going to shallow fry the chicken on both sides about three minutes each side and turn that onto a plate that has paper towel on it to drain. For the sauce, we're going to heat a pan, saute some garlic, add capers, lemon and a pad of butter that's been rolled in flour, deglaze with white wine. We'll swirl that sauce around, it will thicken and we're going to lay it on top of the chicken.
