Hi, I'm Jared Abbott, but you call me Chef J. Here's how to cut turkey cutlets. I'm going to use fresh lean turkey breasts, which is a healthy alternative to red meat. Alright, so my local butcher had this full turkey breast, it's got bone in, skin on. I'm going to start by tying to pull the skin back a little bit, free up the breast. I'm just going to start, I feel the bone there right in the middle. I'm just going to cut all along the bone, the fillet of turkey breast to get it free. So I can cut my cutlets from it, long the bone there. Now that I've got the turkey breast freed up off the bone, I want to clean it up a little bit. Pull off some of this extra skin fat. Just lie it flat, just take my sharp knife and just start to cut kind of half inch thick pieces of this turkey right off the breast. Go at an angle, you'll get nice cutlets afterwards. Cooking with cutlets is easy and fun. Being a thin slice of meat, cooks really quickly. And turkey of course, is a healthy alternative, low in fat, yet still high in protein.
