Hi, I'm Chef Jamel Boyd, and today we're gonna teach you how to a cook a chicken and red wine and mustard. A fun way to cook this on a cold wintery day, you can stew this in a red wine and mustard, and it will be a great for your lunch or dinner. Okay, so to prepare this we're gonna pan sear our chicken thighs on one side. We're gonna let that cook on one side for a minute. Then we'll flip that chicken and let it cook on the other side for another minute. The next step we'll do is we're gonna take our red wine, and we'll deglaze that pan, okay? And we're gonna reduce the red wine by half. Then we'll add our brown sugar, 2 tablespoons, then we'll add our mustard, 2 tablespoons. Stir around to mix and incorporate, and then some salt and pepper, and then we'll add our cup of chicken stock. Let it simmer for 30 seconds, then we'll put it in the 350 degree oven for about 35 to 40 minutes. Okay, so now that I've taken the chicken out of the oven, I'll remove to another pan, and then I'm just simply gonna finish the sauce with cold butter, fresh farms called Monteroberg. And we'll add the butter, and we'll swirl it in like this so it's all incorporated. We'll just drizzle some sauce down on the plate like so, nice amount, and we'll just simply place our chicken on the puddle of sauce, like so. Add a little bit of this on top, I like to serve it with some just shredded carrots.
