Hi, I'm Ula Robertson Neumann, chef and owner of At Your Service NY Catering. Today, I'm going to show you how to make liver and onions with rice and gravy. This is a Turkish recipe. I pre-heated the pot to medium heat and I'm now going to add about a tablespoon, tablespoon and a half of olive oil. So I'm adding now the liver. Okay so now is the time to add the onions and I only will add about a third of the onions because the rest is for our onion gravy. Okay the onions are now translucent. This is the time to add the rice, spread it out evenly and add four cups of water. So at this time I don't stir any more because the rice needs to be sitting on top of the liver. So I would bring this now to a boil and then cover it and put it in the oven and bake it for 20 minutes. So while the liver and the rice are cooking in the oven I will start with the onion gravy. I added about a tablespoon or tablespoon and a half of olive oil and I will now add the remaining onions. So the onions are now caramelized enough for our purpose here and I will be adding a little bit of water so they can cook themselves into a gravy and now it's also the time to add salt and pepper. So the liver and the rice cooked for 20 minutes in the oven and rested on the counter for like five minutes so we are ready to plate now.
