Anthony Goncalves, how you doing? Today, I'm going to show you how to braise calamari in wine. So, you get some olive oil, you get a hot pan. You're going to make this pan nice and hot, you're going get that olive oil going. And then, we're going to add some garlic. We're going to roast up the garlic, we're going to add some crushed red pepper flakes. And then, we're going to put the calamari in it and it's going to be quick. Hot and quick. So, there's your calamari and you want to move it around. And so, braising it in wine, right. So we get that, we're going to take off any of the juice that's on that calamari first. And see it's cooking off and it's getting really good. This is getting super delicious already. What we're going to do is de-glaze, a little bit wine, let that cook off. It's going to be super delicious, I can it already. Calamari is cooked just perfectly. And anything I do, I need to add a ton of herbs, I need freshness, I need it to be clean. Never enough herbs.
