How you doing? Anthony Goncalves. Today, I'm going to do some oven-baked crispy fish and chips. Oven-baked fish, automatic for me is cod and then potato flakes, that's what came to me. So, here I have a sheet pan, one tab of butter and olive oil. You want to preheat your oven to 350, you want to get that in there. And, you want to caramelize that butter and get the oil nice and hot. We have our cod. So, I'm going to dredge the cod in the flour. Okay. And, I like to have that sit a few seconds, don't speed up the process and, then straight to the egg, lay it in the potato and cover. Let that sit, cause I'm going to do a double pass on the pieces of fish. And, I'm going to take this one and bring it through, cover that. A bit repetitive, it might be boring, but we're going to get to something really delicious. You know, the most important is that, like, this is comfort food. Fish and chips, to me, is it brings me back of so many great memories. I'm going to go back and do the egg and the potato, because I want a real nice crust. I mean, for me, if you're going to do this, do it right. You want crusty, that's what makes it. I'm going to bring the fish over here. And, now, I've got that pan and, you know, before we started, I got this process going just to speed things up a little bit. And, here I have the butter and the oil and I'm going to lay that fish right down. And, the only thing that you need do and be conscious of now is the let that go for about seven minutes, 350. And, in seven minutes, you want to turn it. You want to turn it, you want to see that crispy brown coating on one side and you want to turn it and let it go for another three to four minutes and you have this. This delicious, beautiful, flaky, gorgeous, crusty fish and chips. Thanks for joining me, Chef Anthony Goncalves. Delicious, oven-baked, crispy fish and chips.
