My name is Ryan Wagner, and I'm going to show you how to make cracklings. Great snack, have the guys over, or the girls, and watch the next big game. Step one is going to be cut up our pig skins. Once we have them the shape, size we want, we're just going to add them to some salted water and bring them to a simmer. That needs to go for about two hours until they're nice and tender. After that, we're going to dry them overnight in 180 degree oven, just to dry them out so that water inside doesn't explode when you go to fry them the next day. So, now, you've got them out, they're dehydrated overnight, nice and dry. We're going to drop them into some oil to make them nice and crispy. So, about 325, 350 degrees, and the oil is ideal. We cook them until they're brown and crispy, maybe about ten or 15 minutes. Take those out, in a mixing bowl, a little bit of lime juice, lime zest is perfect on them. Serve them hot, ready to go.
