Hi, my name is Raul Villa. Today, we're going to be showing you how to cut pastry. You can actually buy the dough in the store frozen. The only thing is you can't defrost it too much before you starting using it because otherwise you can't roll it. So the best thing is to let it sit about 15 minutes once you get it out of the freezer. Once it's nice and soft where you can actually roll it, it's up to you what you want to put on here. Okay now I'm going to show you how to actually roll the dough and how to cut the dough. First thing is we're going to put some water on this one. People like putting eggs in it, it's up to you what's your preference and the reason is is so the cinnamon sugar can actually stick to the dough. Now we're going to put the cinnamon sugar all over this. Once you've got it in there make sure you spread it very nice and even all over. Now we're going to roll the dough, start at one corner, roll it slowly at the beginning, nice and easy. Don't get too carried away and once you've got it going, it's going to come right to you, very nice. Now you are ready, now you are going to learn how to cut the dough. You can actually do very small little thin slices and now always use a French knife and it's got to have a straight edge on the bottom, no serrated knives for this. Always use a nice French knife, nice and sharp and it's got to have a nice even bottom to it. This way you can actually cut through it, nice and straight and it's going to give you a nice straight edge when you cut it.
