Hi, this is Michael Ballon from Castle Street Cafe and we're going to demonstrate how to stuff a cornish hen with pine nuts. I know you stuff turkeys once a year for Thanksgiving it's a great way to stuff other poultry as well and that's what you're going to see today with this cornish hen. In a sautee pan heat a little olive oil, brown the onions for about five minutes, season with fresh thyme and then repeat with the carrots, celery and mushrooms. Want to sautee them until they're nicely brown and then let rest and cool. Combine all the sauteed vegetables in a mixing bowl and add the pine nuts, the breadcrumbs and the egg. Season with salt and pepper and mix well. Fill the cavity of the cornish hen with the stuffing and use a toothpick to trust the bird. It's much easier than tying it with string and holds the bird together. Base and rubbing in to the top of the bird about a tablespoon of butter and roast about 350 for an hour and 15 minutes until it's done. As you can see it's nice to get your own little package of food and when you get an individually stuffed cornish hen it makes it seem a little special. It's nice for dinner parties and really is a substantial dish.
