Hi. This is Michael Ballon from Castle Street Café and today we're going to demonstrate how to make a low cal breasted chicken stuffed with spinach, roasted tomatoes and fresh mozzarella. And the technique that we're going to use is to pound out a chicken breast thinly and it's quite easy to do. If you have a French style chicken breast with the wings still attached, scrap off the meat on the remaining bone so that it's trim and clean. Slice a pocket into the bottom of the chicken breast so that you have room to add the stuffing. Finely shred some spinach and stuff it inside the chicken breast along with some sun-dried tomatoes and fresh mozzarella cheese. Press down with your hand firmly so that the chicken stays together. Heat a little olive oil in a sauté pan and brown the chicken well, skin side down first. Season with salt and pepper and fresh thyme and then turn the chicken breast over, sauté for 1 more minute. Place the entire skillet in a 350 degree oven for about 5 minutes. When done, serve the chicken breast on top of a bag of sautéed spinach for a low cal chicken breast special. This is a low calorie dish. You can use low calorie cheese and with the chicken it's really a healthful way to have dinner.
