Hi, this is Michael Ballon from Castle Street Cafe. And today, we're making linguini with sausage, with fresh mozzarella. It's the kind of dish you can come home from work and have it on the table in 15 minutes. You need a pound of cooked linguini, a pound of cooked Italian sausage, cut into chunks. And two egg size balls of fresh mozzarella cut into small cubes. And set those aside. To make the sauce, in a heavy bottom sauce pot, brown the onions in a little olive oil until well cooked. And then, add the garlic, thyme, basil, and crushed red pepper, which is optional. Add the peeled diced tomatoes and the sugar and allow that to simmer for at least 30 minutes to one hour. Take the sauce off the flame and stir in the Parmesan cheese. To serve, combine some sauce in the skillet with the sausage and linguini and toss well with the cubed fresh mozzarella. And when it's all hot, serve immediately. Just seeing that this is a quick dish to make and with fresh mozzarella, it gives it that certain authentic Italian quality and I know you'll enjoy it.
